Curried Root Vegetables

Our pantry and refrigerator are brimming with root vegetables this time of year. What better way to enjoy them than with a savory curry sauce? This recipe is vegan though it could be modified to add chicken or beef if desired. Another option would be to add a few cups of cooked garbanzo beans. Mmmmm, yum!

To continue on with the spirit of the giving season I am giving away another wonderful cookbook today. lol, root vegetables dont cook properly in a slow cooker.It would be ok in a casserole though

as a mom of 5 young kids and a full time physician...I can definitely use some ideas for slow cooking whole foods...we are on a gluten free, casein free diet...well I am and am trying to convince the hubby..LOVE your site...just had a friend send it to me...thanks!

That looks like a great book!

I made this today for dinner and served it on it's own with dried coconut on top - a total winner for everyone!! I substituted the potatoes for cauliflower and one of the boys who doesn't 'do' vegetables easily declared the whole lot yummy, even the cauliflower! Thank you x

My niece, a young mom, has just discovered she is gluten intolerant, and with another little one on the way, needs some ideas for time saving GF cooking. This cookbook looks promising. We both need to eat GF, but also dairy free. Does this book have many recipes that would also meet this added need? If not, can you recommend any resources? After returning from traveling in a car on I5 for six days with three kids and having to try and find healthy food on the way I went straight to your cookbook and made your butternut squash soup.
