Curried Root Vegetables

Our pantry and refrigerator are brimming with root vegetables this time of year. What better way to enjoy them than with a savory curry sauce? This recipe is vegan though it could be modified to add chicken or beef if desired. Another option would be to add a few cups of cooked garbanzo beans. Mmmmm, yum!

To continue on with the spirit of the giving season I am giving away another wonderful cookbook today. I would love this cookbook! I have been looking for new recipes for the crockpot (which I think is the BEST invention ever!)....

Mmmm, this recipe made my mought water while I was reading it! Sounds amazing. I am very interested in this book as I have been gluten free and grain free for two years now AND I have a slow cooker. I have not used my slow cooker much since I do not have any recipes for it, but I am really looking forward to changing that. Thank you for this contest! ;)

I just finished a bowl of homemade soup with many of the same ingredients you list in this curried root veggie dish. No curry this time, but I've saved your recipe and will make your version tomorrow. My CSA share comes on Wednesdays and it's been nothing but root vegetables lately (not that I'm complaining). I love this kind of meal, especially with the temperatures dropping. I got a big kick out of your sledding photos, by the way. Beautiful family you have!

Mmmmm I think I'm going to try this recipe tonight. And as for your recipes being too learge; I sometime double mine for a family of four. I have two little girls, but that way I get a break on cooking or freeze leftovers for a rainy day;if I get sick or need a day off. I would love to be the winning recipient of this book as I have often thought of how good some of your recipes would be on a crockpot but I don't have a good understanding of how the time would translate from the stove to the crock. It's funny you should post a curried vegetable crock pot recipe today. I just resurrected our crock pot from the bottom pantry shelf and put together a yummy curried lentil soup with root vegetables well represented in the ingredients.

Your gluten-free, and sometimes egg-free and casein-free recipes are always eagerly anticipated, and the links you so generously provide add a wonderful diversity to the gluten-free repertoire. My copy of your cookbook is spattered, dog-eared and stuffed with other online gluten free recipes - - - and it's only six months old.
