Description
Baby arugula refers to the young, tender leaves of arugula (Eruca vesicaria). Salad mixes may also include baby wild arugula (Diplotaxis tenuifolia), a closely related species with narrower, more deeply lobed leaves and a stronger peppery flavor. Both belong to the Brassicaceae, or cruciferous, family and provide glucosinolates, vitamin K1, folate, lutein, and naturally occurring nitrate. Baby arugula has a delicate texture and mild peppery bite, while baby wild arugula is more robust, spicy, and slightly bitter. Both are versatile leafy greens that add fresh flavor and nutrient density to salads, sandwiches, wraps, grain bowls, pizzas, pasta dishes, pesto, and other meals.
