Description
Baby broccoli is a tender type of broccoli harvested with small florets, slender stems, and edible leaves. It can be found in both green and purple varieties, with purple types developing their color from anthocyanins, the same family of pigments found in berries, purple cabbage, and other red, blue, and purple plant foods. Baby broccoli provides fiber, vitamin C, vitamin K1, folate, carotenoids, and a diverse mixture of glucosinolates and other protective plant compounds. The florets, tender stems, and leaves can all be eaten, making it an especially versatile vegetable for roasting, sautéing, steaming, grilling, and stir-fries.
