Beef bone broth is a rich, savory liquid made by slowly simmering roasted beef bones, marrow bones, knuckle bones, cartilage, and connective tissues in water for an extended period of time. Roasting the bones first develops deeper flavor and allows some of the excess fat to render before simmering. Apple cider vinegar is often added to acidify the cooking liquid and help release compounds from the bones. During the long cooking process, collagen is converted to gelatin while amino acids, peptides, minerals, and other compounds move into the broth. Beef bone broth can be sipped warm or used as a nutrient-rich base for soups, stews, sauces, and other meals.
