Description

Brussels sprouts (Brassica oleracea var. gemmifera) are small, tightly packed leafy buds that grow along the stalk of the Brussels sprout plant. A member of the cruciferous vegetable family, they have a mildly bitter, earthy flavor when raw that becomes sweeter and nuttier as they roast and caramelize. Brussels sprouts are particularly rich in vitamin C and vitamin K1 and also provide folate, fiber, potassium, carotenoids, and protective plant compounds called glucosinolates. They can be roasted, sautéed, steamed, shredded into salads and slaws, added to sheet-pan meals, or cooked with herbs, spices, citrus, nuts, and other flavorful ingredients.
