Description
Raw buckwheat groats are the hulled, unroasted seeds of buckwheat (Fagopyrum esculentum). Despite its name, buckwheat is naturally gluten-free and is a pseudocereal in the Polygonaceae family, along with rhubarb and sorrel, rather than a type of wheat. Raw groats are light green to pale tan with a mild, earthy flavor and tender texture when cooked. Unlike roasted buckwheat groats, or kasha, they have not been toasted and have a milder flavor. Enjoy them as breakfast porridge, in grain bowls, salads, pilafs, soups, and side dishes, or grind the raw groats into fresh buckwheat flour for baking.
