Collard greens (Brassica oleracea var. viridis) are a dark leafy cruciferous vegetable in the Brassicaceae family, closely related to kale, cabbage, broccoli, and Brussels sprouts. Their broad, sturdy leaves have a mild, earthy flavor that becomes sweeter and more tender when cooked.
