Lacinato kale (Brassica oleracea var. palmifolia) is a dark blue-green leafy vegetable with long, narrow leaves and a distinctive deeply textured surface. Also known as Tuscan kale, dinosaur kale, Italian kale, black kale, and cavolo nero, it has a milder, slightly sweeter flavor and more tender texture than many curly kale varieties. Lacinato kale is rich in vitamin K1, carotenoids, glucosinolates, vitamin C, and protective polyphenols. Its sturdy leaves work equally well raw in finely sliced or massaged salads or cooked in soups, sautés, braises, pasta dishes, and traditional Tuscan recipes such as ribollita.
