Yellow onions (Allium cepa) are versatile storage onions with golden-brown skins, pale ivory flesh, and a pungent flavor that becomes mellow and sweet when cooked. They are one of the most widely used culinary onions and work especially well for sautéing, roasting, caramelizing, soups, stews, sauces, and braised dishes. Yellow onions provide fructans, including fructooligosaccharides (FOS), along with quercetin and other flavonoids and a diverse mixture of organosulfur compounds.
