Rockfish is a group of mild, white-fleshed marine fish found along the Pacific coast of North America, with numerous species belonging to the genus Sebastes. Fresh rockfish fillets have delicate white flesh, a mildly sweet flavor, and a tender texture that flakes easily when cooked. Rockfish is an exceptionally lean source of complete protein and provides selenium, vitamin B12, phosphorus, potassium, choline, and smaller amounts of omega-3 fatty acids.
