Roma tomatoes (Solanum lycopersicum) are oval-shaped plum tomatoes with firm, meaty flesh, relatively few seeds, and less watery pulp than round slicing tomatoes. Their concentrated tomato flavor and lower moisture content make them especially well suited for sauces, soups, roasting, grilling, and slow-cooked dishes, although ripe Roma tomatoes are also delicious raw. They provide potassium, vitamin C, carotenoids, and a variety of polyphenols, with lycopene being their most distinctive phytonutrient. Cooking concentrates their flavor and can make lycopene more accessible for absorption.
