Summer squash refers to a diverse group of tender squash harvested while immature, when the skin is thin, the seeds are soft, and the flesh is mild and delicate. Common varieties include green and yellow zucchini, yellow straightneck and crookneck squash, patty pan squash, cousa squash, and round zucchini. Most summer squash belong to Cucurbita pepo and share a similar nutritional profile, providing vitamin C, potassium, vitamin B6, fiber, lutein, zeaxanthin, and other beneficial plant compounds.
