Today we have another guest post from a fellow blogger and friend, Hallie Klecker, who has created an amazingly simple and nutritious "cheesecake" recipe for a mini muffin pan.
This simple gluten-free oatmeal cobbler is also refined sugar-free and vegan, though you can use butter if you like. I make it with Italian plums but you could use any variety of plum or pluot. It can also be made with peaches, blueberries, or blackberries. I've been dehydrating Italian plums like crazy lately.
Since it is squash season, I thought I would begin to share the plethora of winter squash recipes I have floating around my kitchen on scraps of paper. Today's recipe is a cookie, a gluten-free, high fiber oatmeal pumpkin cookie. Paired with a mug of hot mulled cider, it creates a lovely fall snack.
