This creamy dairy-free soup is simple to make and easy to digest. Try adding other vegetables, such as zucchini, garlic, parsnips, kale, or spinach. Add extra stock if you add extra vegetables!

Ingredients
2 tablespoons extra virgin olive oil
1 large leeks chopped
1½ pounds broccoli chopped
8 ounces cremini mushrooms chopped
6 cups chicken bone broth (or vegetable stock)
2 teaspoons dried thyme
1 tablespoons fresh oregano
½ cups parsley
½ cups fresh basil
Herbamare (or sea salt)
freshly ground black pepper
