This is a great meal to make when you don't have a lot of time to spend in the kitchen, and you have leftover rice that is needing to be used! You can vary the vegetables in this recipe to what you have on hand—shredded green cabbage, thinly sliced kale, chopped cauliflower, diced jalapeño peppers, and chopped garlic would be wonderful additions!

Ingredients
1 tablespoons avocado oil
1 small onions diced
1 pounds ground beef
1 medium zucchini diced
1 medium red bell peppers seeded and diced
1½ teaspoons smoked paprika
½ teaspoons ground cumin
½ teaspoons garlic powder
½ teaspoons chipotle chili powder
½ teaspoons sea salt
2 cups cooked white basmati rice
½ cups chopped cilantro
