The other evening, as I was preparing dinner, I thought about using up some of the zucchini that I had. Why not layer it, sort of like scalloped potatoes I thought? Hmmm, almond flour might be nice in between the layers of zucchini as would the sweet walla walla onions I had.

After a temporary break of much needed spring-like rain, summer is back! We spent the day at the beach. The kids waded in the ocean and found purple and orange starfish in the tide pools. The boys were happy to dig in the sand for a few hours. And me?

Yesterday I was standing in my kitchen at 5pm, with four hungry children underfoot, wondering what to make for dinner. I made the usual rounds to the pantry, fridge, and garden. Something spicy, green, and with noodles was brewing in my mind. A green curry sauce, over noodles, with tempeh, broccoli, spinach and zucchini.

Hope you are all enjoying this lovely weekend! We deep cleaned our house this morning. It really needed it. Now we are off to a family picnic in the park since the sun has decided to finally peek out.

What a gorgeous day here in Bellingham! I think it hit 75 degrees, at least on our thermometer. It was a wonderful way to celebrate May Day. Our 4-year old daughter, Gracie, danced around the May Pole at her preschool celebration and made flower garlands.

Today was our daughter, Gracie's, 4th Birthday. I can't believe she is four already. Where did 3 go? It just disappeared into sleepless nights and endless days with twin babies.

The other night Tom began preparing dinner by making his favorite Quinoa Black Bean Salad. I usually like to serve it along side some steamed winter squash for a light meal.
