Soaking buckwheat groats overnight in cultured buttermilk not only yields a light and fluffy pancake, but it also breaks down the phytic acid in the buckwheat, allowing for better nutrient absorption. Buckwheat actually contains some of the lowest levels of phytic acid compared to other grains and pseudo-grains, and it also contains high levels of phytase, the enzyme that breaks down phytic acid. Phytase "wakes up" when a grain is soaked. Serve these nutrient-dense pancakes with extra blueberries and a cup of herbal tea for an energizing breakfast.

Ingredients
1½ cups buckwheat groats
1¾ cups buttermilk
2 large eggs
1 teaspoons baking powder
¼ teaspoons baking soda
¼ teaspoons sea salt

Other Ingredients

1 cups blueberries

Plus/Minus: Plus-whole grain and pretty simple/easy, Minus-have to plan ahead to soak.
I used eggs as directed, and the mix was a bit thin-1/3 C measures easily spread out to 6" (though I had to refrigerate a second night because I didn't get around to making them the first morning after initial soaking).
While I like the easy recipe, I didn't love the buttermilk flavor.
I'll stick with the original "basic whole grain pancakes" recipe from the excellent Nourishing Meals cookbook (has 5 different kinds of GF flour, so that takes me longer to prepare).

I used avocado oil in a cast iron skillet and the pancake stuck making it impossible to flip without them burning or breaking. Blueberries were sour and I didn't care for putting them in the pancake. Had to use butter in a non-stick skillet and then they cooked thoroughly as well. Cast iron does not work well for these.

These tasted great and my family without dietary restrictions enjoyed them too! Subbed flaxseed meal eggs (2 TBS flaxseed meal with ~5 TBS water) as I can't do eggs. Wait to flip until bubbly and not wet on top esp if adding blueberries.
