Meal prep a batch of this salad on the weekend so you have ready-to-go lunches for several days during the week! The chickpeas can be replaced with leftover cooked chicken if desired! You'll need four wide-mouth quart jars for this recipe.

Ingredients

Dressing

½ cups whole milk greek yogurt
4 ounces feta cheese
4 tablespoons extra virgin olive oil
3 tablespoons lemon juice
¼ cups fresh dill
3 cloves garlic peeled
½ teaspoons sea salt
¼ teaspoons black pepper

Salad

2 cups cooked chickpeas
1 large red bell peppers chopped
1 large English cucumbers chopped
1 pints cherry tomatoes
½ cups pitted kalamata olives
1 heads romaine lettuce chopped
