Grain bowls are a nourishing and satisfying meal that can be served for lunch or dinner and are easy to transport to work or school or meal prep ahead of time. The ingredients for this dish are flexible, so you can customize them to your family's taste. Leftover roasted chicken can easily be used for this bowl, but if you don't have any try using Simple Seared ChickenThe hummus can be homemade or store bought, just make sure you choose one made with olive oil rather than soybean oil. Additional vegetables or dips such as Roasted Cauliflower, Grilled Zucchini, or Olive Tapenade can also be added to change up the flavors.

Dressing

½ cups extra virgin olive oil
6 tablespoons freshly squeezed lemon juice (about 2 lemons)
2 cloves garlic
2 tablespoons fresh oregano
½ teaspoons sea salt
½ teaspoons freshly ground black pepper

Bowl

3 cups cooked millet
2 cooked and sliced boneless chicken breasts (or chicken thighs)
1 cups hummus
1 pints cherry tomatoes cut in half
¾ cups chopped roasted red bell peppers
1 medium English cucumbers diced
¾ cups pitted castelvetrano olives
½ cups julienned red onions
½ cups crumbled feta cheese
