This gluten-free pasta salad comes together quickly and contains an array of fresh Mediterranean flavors—my children love it. Keep a batch in your refrigerator to have a nourishing meal on hand for hungry children!

12 ounces gluten-free pasta cooked
1½ cups cooked chickpeas rinsed and drained
1 small red onions diced
1 medium cucumbers diced
1 large red bell peppers seeded and diced
1 cups cherry tomatoes halved
½ cups kalamata olives pitted and halved
1 large handfuls parsley chopped
4 ounces feta cheese crumbled
4 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
½ teaspoons sea salt
¼ teaspoons black pepper
