This is my children’s favorite quinoa salad! The whole bowl disappears before I can get any put away into the refrigerator. Take this salad to work or have it as a light lunch or serve with a vegetable-bean soup for dinner.

Ingredients

Salad

6 cups cooked quinoa
1 cups chopped red cabbage
4 celery stalks chopped
1 red bell peppers diced
3 carrots sliced into rounds
3 green onions sliced into rounds
1 cups chopped cilantro (or parsley)

Dressing

½ cups extra virgin olive oil
6 tablespoons freshly squeezed lemon juice
1 teaspoons sea salt
1 teaspoons finely grated lemon zest
