Composed Salad of Quinoa, Tomatoes, and Olives

A composed salad is one in which ingredients are arranged on a platter instead of being tossed together. Composed salads are a beautiful way to present nourishing ingredients! I like to use the bright green, round castelvetrano olives in the recipe, though any high quality olive will do. Often times we will steam a large amount of fresh greens, such as chard or kale, and add it to this meal. Other lovely additions are Balsamic Roasted Beets, or Massaged Kale.



2 cups quinoa
3½ cups water
¼ teaspoons sea salt


1 pints cherry tomatoes (or grape tomatoes)
1 small red onions finely diced
1 cups chopped parsley
1 cups castelvetrano olives (or your favorite variety of olives)

Lemon Tahini Dressing

½ cups sesame tahini
½ cups freshly squeezed lemon juice (2 large lemons)
¼ cups extra virgin olive oil
3 tablespoons water
2 cloves garlic crushed
1 tablespoons lemon zest
1 teaspoons sea salt

Optional Additions

3 cups cooked chickpeas
1 large bunches kale chopped and steamed
