This is one of the quickest savory breads I make. The baking soda and apple cider vinegar give it its rise without yeast or eggs, while the chia seeds hold in moisture, resulting in a soft, squishy bread. Use it like focaccia bread and cut it in half for sandwiches, or spread some with homemade jam.

Ingredients

Dry Ingredients

1¼ cups raw buckwheat flour
½ cups raw sunflower seeds
½ cups pumpkin seeds
½ teaspoons fine sea salt
½ teaspoons baking soda

Wet Ingredients

¼ cups finely ground chia seeds
1½ cups warm water
2 tablespoons extra virgin olive oil
1 tablespoons raw apple cider vinegar
1 tablespoons maple syrup

Yum! Wow, so quick and easy with simple ingredients. Perfect, hearty substrate for my avocado toast. I am super lazy with making homemade breads so this really fit the bill! Can't wait to try your other buckwheat flour-based breads.

Made this bread to go with soup. The raw buckwheat is easy to grind and the bread has a spongy, crunchy texture. Raw buckwheat flour makes a mild tasting baked good. Yum!
