Serve this low-oxalate and low-histamine berry peach cobbler at the end of a balanced summer meal! It is best served warm, right out of the oven.

Ingredients

3 medium peaches chopped
2 cups blueberries
2 tablespoons maple syrup
1½ tablespoons superfine sweet rice flour
½ teaspoons ground cardamom

Topping

¾ cups superfine sweet rice flour
¾ cups potato starch
2½ teaspoons baking powder
¼ teaspoons sea salt
8 tablespoons cold butter cut into small pieces
2 large eggs
¼ cups maple syrup
