These low-oxalate muffins are delicious hot out of the oven with a drizzle of raw honey. The recipe can easily be modified to make it suitable for the low-histamine diet as well; just follow the modification tip below the recipe.


Dry Ingredients

½ cups coconut flour
cups potato starch
¾ teaspoons baking soda
½ teaspoons sea salt
2 teaspoons pumpkin pie spice

Wet Ingredients

4 large eggs
¾ cups pumpkin purée
cups melted coconut oil (or unsalted butter)
cups maple syrup
1 teaspoons vanilla extract (optional)
