These low-oxalate muffins are delicious hot out of the oven with a drizzle of raw honey. The recipe can easily be modified to make it suitable for the low-histamine diet as well. Just follow the modification tip below the recipe.


Dry Ingredients

½ cups coconut flour
½ cups potato starch
1 teaspoons baking soda
½ teaspoons sea salt
2 teaspoons pumpkin pie spice

Wet Ingredients

6 large eggs
1 cups pumpkin purée
6 tablespoons melted coconut oil (or unsalted butter)
6 tablespoons maple syrup
2 teaspoons vanilla extract
