Miso-Ginger Shredded Beef

MISO-GINGER SHREDDED BEEF-1

This savory and tender shredded beef comes together quickly in a pressure cooker, making it an ideal option for busy weeknight dinners. Infused with the rich umami flavor of miso and tamari, this dish is both comforting and deeply nourishing. Beef is an excellent source of high-quality protein, providing all essential amino acids necessary for muscle repair and overall health. It’s also rich in iron, which supports red blood cell production and energy levels, as well as B vitamins (B12, B6, and niacin) that aid in brain function, metabolism, and nervous system health. Serve this flavorful shredded beef with baked sweet potatoes or rice for a hearty, energy-sustaining meal, and pair it with a crisp cabbage slaw to add fiber, vitamin C, and phytonutrients.

Ingredients
2 pounds beef rump roast cut into pieces
¼ cups wheat-free tamari
2 tablespoons brown rice vinegar
2 tablespoons gluten-free miso

This was outstanding! Made exactly as-written and served over rice with broccoli on the side. My whole family loved it!

Very tasty. Subbed coconut aminos for tamari and rice vinegar for brown rice vinegar (that’s what I had in the house). Also, the store I went to only had some local small pieces of stew meat so I used that but only cooked it for two hours. Came out great. Next time I will try the roast.
