Chicken Apple Breakfast Sausages

Ali Segersten (author)

You can make this recipe ahead of time, form them into patties and either freeze or refrigerate them before cooking. Then take one or two out at a time to cook as needed. Uncooked sausages will last up to 2 days in the refrigerator or 6 months in the freezer. Serve with a green salad and a cup of herbal tea for breakfast. You can also serve these for dinner in between two romaine lettuce leaves with your favorite fixings!

Ingredients
1 medium granny smith apples cored, peeled and chopped
5 green onions chopped
3 tablespoons fresh sage
1 teaspoons Herbamare (or sea salt)
1½ pounds boneless chicken thighs
1 tablespoons extra virgin olive oil (for cooking)

This is a great and easy recipe that I can make quickly in advance and freeze before cooking. Very easy to pull out of the freezer, especially when cooking for one. I don't peel the apples, just core and put in the food processor. Very tasty.

Very tasty + easy to make, everyone enjoyed this. I used ground chicken thighs, no food processor. I added a few more herbs; onion/garlic powder, dried chili flakes, half the Herbamare salt was enough for me.

These are easy in the food processor. I just made them for the fourth time for a family brunch and everyone loved them.

These are tasty, quick and easy to make. We liked the texture and the subtle flavors. I will add more sage and onions (white) next time; and maybe a roasted padron pepper or two.

I love these sausages. I make this several times a year. Tonight, I forgot to add the apples :( ...but it still turned out pretty good and I will eat with avocado and side salad.
I do love having the apple in it and hope not to forget next time :)
