Maduros are a traditional South American side dish made from frying sweet (ripe) plantains in oil. I like to sprinkle a little bit of cinnamon and coconut sugar over the maduros before serving. These are a fun and nutritious dessert or can be served as a side dish along with black beans, rice, and shredded beef
