When I first started making this soup recipe the entire pot was gone in one sitting! I now make a double batch to feed my family. I rely on leftovers for quick meals the following days! If you would like, you could freeze portions of this soup before adding the greens. When you are ready to use it, heat it up in a small pot and add a handful of greens. This will keep the soup fresh-tasting and bright. Serve soup with Red Quinoa Masala or cooked long grain brown rice if desired. I prefer to use a homemade chicken bone broth instead of water when making this recipe—it adds extra flavor, protein, and fat!

Soothing Red Lentil Soup

Ingredients
2 tablespoons extra virgin olive oil
1 large onions chopped
3 cloves garlic crushed
2 teaspoons grated fresh ginger
2 teaspoons curry powder
2 cups red lentils
8 cups water (or bone broth)
3 large carrots diced
4 cups thinly sliced kale
2 tablespoons freshly squeezed lemon juice
2 teaspoons Herbamare (or sea salt)

Super warming on a cold winter's day! I was initially wondering about the amount of grated ginger (too much for me?), but wow, when I had my first bowl, I knew it was exactly right on. So delicious. :)

This is one of our old standby favorites! We've been eating it for probably close to 10 years at this point? Always a winner, everybody loves it.

This is my fall/winter go to soup. Love it! Added potatoes and carrots last night and it was delicious. I also add a lot of extra kale.

This soup is true to its name. Very soothing, so filling, and extremely delicious!!! I made two changes for mine. I added celery because my husband loves celery in everything, and I also added an additional 1tsp of curry powder because I love lots of flavor. I will make this again and again! Thank you!

Really yummy ! Even the curmudgeon ate it quickly after the initial taste. I omitted onion and kale. Used veggie stock and 2 bok choy. Also ran out of fresh ginger and lemon, powdered and lime worked fine.
