Smoked Salmon Nourish Bowl
Smoked Salmon Nourish Bowl-2

All of the components for this nourish bowl can be prepped ahead of time so they are available for a quick to assemble lunch or dinner. The recipe is very flexible and you can customize it to use ingredients you may have on hand. Add bell peppers or cooked mushrooms, or use massaged kale or in place of the steamed kale. You can use your favorite cooked grain as the base for this nourish bowl, but I recommend short grain brown rice.

Ingredients

Bowl

3 cups cooked short grain brown rice
2 cups steamed curly kale
1 cups flaked smoked salmon
1 large carrots grated
1 ripe avocados diced
2 green onions thinly sliced
1 tablespoons sesame seeds

Dressing

1 medium oranges peeled and seeded
1 tablespoons chopped fresh ginger
¼ cups creamy roasted almond butter
3 tablespoons brown rice vinegar
1 teaspoons raw honey
¼ teaspoons sea salt
6 tablespoons extra virgin olive oil

This WAS good. The combination came together well. The smoked salmon isn’t essential, but it did make the meal scrumptious.

Delicious! I used lime instead of orange and vinegar in the dressing. And toasted almonds blended instead of almond butter. Just cuz that’s what I had. I modify veggies slightly depending on what I have. What a great idea for a bowl.
