This salad makes a great meal prep recipe for the weekend! Divide it among six glass jars or small glass storage containers to have lunches ready to go for school or work. Other vegetables can be added such as finely chopped kale, diced bell pepper, or pitted olives.

Ingredients

Rice

2 cups short grain brown rice
3¾ cups water
2 pinches sea salt

Chicken

1 pounds boneless chicken breasts
1 tablespoons extra virgin olive oil
½ teaspoons sea salt
¼ teaspoons black pepper

Salad

4 medium carrots peeled and sliced
2 green onions sliced
½ cups chopped parsley
¼ cups chopped fresh dill
½ cups extra virgin olive oil
¼ cups lemon juice
1 teaspoons sea salt
