This light and refreshing brown rice salad is packed with flavor, fiber, and raw vegetables! It makes a lovely side dish to an evening meal or a light lunch to take with you to work or school. 

Ingredients

Rice

2 cups short grain brown rice
3½ cups water
2 pinches sea salt

Salad

¼ heads green cabbage thinly sliced
½ small red onions thinly sliced
2 large carrots peeled and thinly sliced
1 large handfuls parsley chopped

Dressing

6 tablespoons lemon juice
4 tablespoons extra virgin olive oil
2 cloves garlic crushed
1 teaspoons Herbamare
