I like to keep a few jars of organic unsalted Sunbutter in my pantry for quick snacks and for use in healthy baking recipes such as this one. These bars make an excellent nut-free, vegan treat for your child’s lunchbox!


Dry Ingredients

1½ cups sprouted brown rice flour
¼ cups tapioca flour
½ teaspoons baking powder
½ teaspoons baking soda
¼ teaspoons sea salt

Wet Ingredients

2 tablespoons ground chia seeds
¼ cups hot water
½ cups softened coconut oil
½ cups sunflower seed butter
½ cups unsweetened applesauce
¾ cups coconut sugar
2 teaspoons vanilla extract

Other Ingredients

¼ cups dark chocolate chips
