Serve this dish as part of a light summer meal or for a simple lunch. If you cannot find French lentils you may substitute green or brown lentils instead. This salad will keep in a covered container in the refrigerator for up to 5 days.

Ingredients

Lentils

6 cups water
1½ cups French lentils rinsed and drained

RIce

1 cups brown basmati rice
1¾ cups water
pinches sea salt

Salad

2 medium carrots diced
1 pints cherry tomatoes
1 cups kalamata olives pitted and chopped
1 cups chopped parsley
1 bunch green onions
½ cups chopped fresh basil

Dressing

6 tablespoons fresh lemon juice
4 tablespoons extra virgin olive oil
2 cloves garlic crushed
2 teaspoons finely grated lemon zest
1 tablespoons chopped fresh oregano
½ teaspoons sea salt
½ teaspoons freshly ground black pepper
