You are about to bear witness to our first ever cooking video. We decided to bring our digital camcorder with us to Hawaii in hopes of producing a few cooking videos with all of the "free time" we would have.
There seems to be a divide when it comes to beets. Some people light up at the thought of their earthy sweetness, while others carry lingering memories of soft, canned slices from childhood. Fresh beets, though, are an entirely different experience. When prepared well—roasted until tender, grated raw into salads, blended into smoothies, or juiced with fresh ginger and lemon—they become vibrant, grounding, and deeply nourishing. Beets are especially supportive during therapeutic food plans like the Elimination Diet. Their deep ruby color comes from betalains, a class of antioxidant pigments that help buffer oxidative stress and support the body’s natural detoxification pathways. These compounds have been studied for their role in supporting phase II liver function, promoting healthy bile flow, and protecting cellular integrity.
I have a very simple nourishing recipe for you today. Anyone remember cream of broccoli soup from your childhood? I do. My mom used to make a cheesy cream of broccoli soup that I don't remember being too fond of. Well, this one is delicious and naturally gluten-free and dairy-free.
Nettles, you say? You mean those pesky weeds that grow like wildfire and sting if you brush up against them? Yes—those! What many people don’t realize is that nettles are actually a powerhouse of nutrients. Once they’re cooked, blended, or dehydrated, they completely lose their “sting” and become a delicious, mineral-rich green. Nettle season varies depending on the year and climate. Here in the Pacific Northwest, with our unusually warm and sunny winter, the first tender shoots are already here! Perfect timing for gathering and enjoying them in the kitchen. My oldest daughter, Lily, even helped me put together the photo tutorial below to show you how simple it can be to harvest and prepare these wild greens.
What would be nice to warm up with on a chilly winter day? Spicy, hot peppers, ginger, and garlic! I created this vegetarian burger recipe to test for nightshades during Phase 3 of the Elimination Diet, though everyone can enjoy this flavor-packed recipe!
The words "creamy" and "soup" usually elicit thoughts of a rich puréed vegetable base with heavy cream stirred in. This simple soup gets its creaminess by puréeing part of the soup after it has cooked. I grew up eating my mom's creamy (and dairy-free) potato soup which very much resembles this recipe.
A few months ago I soaked a bowlful of sunflower seeds overnight with the intention of creating some sort of yummy pate to be wrapped up in a collard green. I wasn't quite sure how it would evolve but I trusted it would be, at the very least, edible.
We're back with fabulous elimination diet recipes. Oh, how I adore the lovely lemon! I can't tell you how excited I was to taste lemon juice once again. This flavorful dark leafy green salad is a staple in our house this time of year. It utilizes hardy and super nutritious greens such as kale and collards.
