Grapefruit, Radish, Cabbage Salad
For the past few months, citrus and cabbage have become some of my favorite two foods! This scrumptious salad combines them both. I use napa cabbage which is a very mild, tender cabbage. It is also a favorite vegetable of our children. My oldest daughter likes to pack napa cabbage in her lunch!

Spring Herb Quinoa Salad with Dandelion Greens and Peas
Light, refreshing, and full of Spring's intoxicating flavors—rosemary, thyme, oregano, and chives, along with fresh dandelion greens, peas, and lemon—this quinoa salad is balanced and super nutritious. I've added salmon and sheep's feta but it can be made vegan too.

Garlic Rosemary White Bean Dip
The other day a wonderful friend came to visit us from Seattle along with her children. She brought a spread of beautiful, delicious food to share. I also cooked up a lovely white bean, olive, tomato pasta sauce to go over noodles. I had plenty of leftover white beans in the pot which I wasn't sure yet what to do with.

Chicken & Wild Rice Salad with Tangerines & Hazelnuts
This simple grain salad is something I like to make when I cook a whole chicken for soup. I will save some of the breast meat for enchiladas or salads like this one. Now, if you are vegan please read on to see what I do to make this salad sans meat.

Harvesting Nettles with Children.....
Nettles you say? You mean those pesky weeds that grow like wildfire and sting me if I get too close? Yep. These little plants are a powerhouse of nutrients!
Thai Coconut Fish Sticks (Gluten-Free + Egg-Free)
