1 small onions minced
3½ pounds russet potatoes grated
4 large eggs whisked
⅓ cups brown rice flour
1½ teaspoons Herbamare
½ cups avocado oil (for cooking)

Add a bit of the liquid after putting each latke on the griddle-this makes a nice crust and holds it together better.

This made far more than the stated number of latkes. Mine were about 4-5” across and the recipe made about 24!
Also, my prep time with cleaning potatoes (I did not peel them-only removed unwanted or questionable spots) was about 40 minutes, and cook time about 45 minutes-even with 2 large griddles running at the same time.

This recipe uses avocado oil and claims to be low-histamine, despite avocados being considered high histamine.

I haven't had potato latkes since I went gluten free a couple years ago. These taste just like traditional potato latkes. The freeze well so it's easy to make a batch ahead on the weekend for quick breakfasts during the week. I reheat them in a skillet and they're almost as good as freshly made. This recipe will be in my regular rotation.
