This is a great recipe to make when you have an excess of ripe bananas needing to be used! These bars make a great after-school snack or lunchbox addition for your children. Make a batch on the weekend to have on hand for school lunches throughout the week.

Ingredients
1½ cups mashed bananas (3 to 4 large ripe bananas)
¼ cups avocado oil (or coconut oil)
¼ cups maple syrup
2 teaspoons vanilla extract
2 cups rolled oats
¼ cups flaxseed meal
1½ teaspoons baking powder
½ teaspoons sea salt

I made this again replacing the maple syrup with applesauce and it was good! To serve, I placed some frozen blueberries in the bottom of my serving dish, placed a hot oatmeal bar on top to melt the blueberries. It was delicious.

Mine came out more like a baked oatmeal than a bar, but delicious nonetheless!

Love this, I added cinnamon to the top! Easy to make and held together as a bar. I'm going to try a pumpkin version by swapping out the banana.
