Hi Jaqueline,
I don't think that would work, but you could try. You may need to mix potato starch (a low-oxalate thickener and binder) along with sunflower seed flour to get the correct consistency. Let us know how it goes if you try it! :)

Can I use sunflower seed flour in place of superfine sweet rice flour?

This recipe came together so nicely and the result is fantastic. Could almost be considered a savory cookie - there is just the right touch of sweetness. My husband, who prefers traditional sugary cookie was very surprised by how much he likes them. I'll be making these again!

Thank you!! So few lox ox low histamine recipes out there. They baked so nicely, didn't spread very much which is great. It made 15 cookies at a heaping TBS drop, and i flattened slightly. Used 2T extra sweet rice flour as instructed. I used ghee an had dried cranberries on hand. Blueberries next time!
