This gluten-free banana bread recipe was developed for the low-oxalate diet. Replace the white rice flour with brown rice flour if you are not on this diet!


Dry Ingredients

1 cups white rice flour
½ cups sweet rice flour
½ cups potato starch
2 teaspoons baking powder
½ teaspoons baking soda
½ teaspoons fine sea salt

Wet Ingredients

1½ cups mashed bananas (3 ripe bananas)
2 large eggs
½ cups plain yogurt
¼ cups maple syrup
¼ cups avocado oil (or unsalted butter)
2 teaspoons vanilla extract
