My children love the combination of mint and chocolate chips and I feel good serving them this ice cream knowing that it is providing them with healthy fats and a slew of antioxidants. The avocado gives the ice cream a light green color and helps to make it very creamy. Be sure to use a high-powered blender as the avocado and coconut milk thicken up immediately after you start the blender.

Ingredients
2 cans coconut milk chilled
2 medium avocados
⅓ cups raw honey (or coconut nectar)
2 teaspoons organic peppermint flavoring
½ cups dark chocolate chips

I've made this ice cream many times. It is one of our favorites. Very easy to make. Goes well with chocolate cake.

I've tried making this twice. The consistency is too thick and doesn't have good mouth feel. The natural mint extract (at this amount anyway) tastes artificial and makes me unable to eat this. We made a batch the other day and had to compost it because no one in the family could eat more than a couple of bites. My kids typically love mint chocolate chip ice cream. This is the only recipe from Nourishing Meals that we have not liked and we've made many, many from the cookbook.
