Serve this easy Instant Pot wild rice pilaf as part of a holiday gathering or cozy fall or winter meal. It tastes best when made with homemade chicken stock or turkey stock!

Ingredients
2 tablespoons extra virgin olive oil
1 cups diced shallots (or white onion)
8 ounces white button mushrooms chopped
3 celery stalks diced
1 teaspoons sea salt
½ teaspoons black pepper
1 teaspoons dried thyme
½ teaspoons dried sage
1 cups wild rice
1 cups long grain brown rice
2 cups water (or chicken or turkey stock)
½ cups parsley chopped

I love this dish. At first I was nervous about making it, but it tasted wonderful! I soak both rices overnight, so not sure if that is ok with instant pot recipes? Even my husband, who hated celery and mushrooms, loves this😊
