Wild Rice Stuffing

1½ cups wild rice
1 cups brown basmati rice
5 cups water (or chicken stock)
¼ cups extra virgin olive oil
1 large red onions chopped (about 3 cups)
1 tablespoons dried thyme
2 teaspoons dried sage
1½ teaspoons Herbamare
1 teaspoons freshly ground black pepper
8 ounces white button mushrooms chopped (about 3 cups)
4 large celery stalks chopped (about 2 to 3 cups)
1 cups raw pecans roughly chopped
½ cups dried cranberries
1 granny smith apples diced
1 cups chopped parsley
