This soup makes a wonderful fall or winter meal and freezes well for later use. Serve with roasted winter squash for a balanced, nutrient-dense meal. If you can't find organic bone-in turkey breast then use a whole organic chicken instead. 



1 bone-in turkey breast (3 to 4 pounds)
1 large onions chopped
1 large carrots chopped
3 celery stalks chopped
½ bunches parsley chopped
2 sprigs fresh rosemary
3 sprigs fresh thyme
1 teaspoons whole black peppercorns
1 tablespoons sea salt
12 cups water


1 cups wild rice
2 cups water


2 tablespoons extra virgin olive oil
1 large leeks sliced and well rinsed
4 large carrots diced
4 celery stalks diced
2 teaspoons dried thyme
1 teaspoons dried sage
1 bunches lacinato kale thinly sliced (about 4 cups)
½ bunches parsley chopped
