Delicata squash is a variety of winter squash that has a thin, edible skin and a sweet, delectable flavor. It is very rich in anti-inflammatory carotenoids such as beta-carotene, alpha-carotene, lutein, and zeaxanthin. These carotenoids act as antioxidants in the body, calm inflammation by donating electrons, and also suppress inflammatory pathways at the genetic level! Serve this easy side dish with roasted chicken, baked salmon, or with slow-cooked lamb or beef. It is also delicious served with a quick vegetable chickpea stir-fry!

2 large delicata squash
3 tablespoons extra virgin olive oil
½ teaspoons sea salt
¼ teaspoons black pepper (optional)
