This recipe can be made ahead of time and reheated before serving. Just before serving, try sprinkling on some Candied Walnuts or roasted hazelnuts; or stir in a handful of sliced almonds when you add the rice to the skillet! For directions on how to cook wild rice use my Basic Wild Rice recipe. Then let the rice cool completely before using. If you don't like the tart, bitterness of fresh cranberries you can substitute them with dried cranberries (sweetened with apple juice) and omit the maple syrup.

Wild Rice, Kale, and Cranberry Pilaf

Preparation Note

You'll need to cook 1 cup of wild rice before making this recipe.

2 tablespoons extra virgin olive oil
1 small red onions chopped
½ teaspoons dried thyme
½ teaspoons Herbamare (or sea salt)
¼ teaspoons freshly ground black pepper
½ cups fresh cranberries
½ bunches lacinato kale chopped
3 cups cooked wild rice
1 tablespoons maple syrup (optional)
