This easy plant-based main dish can be made in minutes as long as you have cooked or canned chickpeas on hand! Serve with Guacamole, Pico De Gallo, and your favorite homemade or store-bought tortillas.



2 tablespoons extra virgin olive oil
1 medium red onions thinly sliced
1 large green bell pepper cut into strips
1 large red bell peppers cut into strips
2 cups cooked chickpeas rinsed and drained
2 teaspoons smoked paprika
½ teaspoons ground cumin
¼ teaspoons chipotle chili powder
¼ teaspoons sea salt

Other Ingredients

½ small white onion finely diced
1 medium tomatoes diced
1 jalapeño peppers thinly sliced
1 medium avocados sliced
¼ cups cilantro finely chopped
1 limes cut into wedges
