These plant-based antioxidant-rich tacos are always a crowd-pleaser! My children devour them. The pan-fried curried chickpeas are addicting! Use your favorite homemade or store-bought tortillas. Pictured here are my homemade grain-free Almond Flour Tortillas. If you are following a nut-free or elimination diet then use these Gluten-Free Brown Rice Flour Tortillas

Ingredients

Curried Chickpeas

1½ cups cooked chickpeas rinsed and drained
2 tablespoons extra virgin olive oil
1 teaspoons curry powder
¼ teaspoons sea salt

Tacos

1 packages gluten-free tortillas warmed
2 cups shredded red cabbage
1 cups cherry tomatoes halved
½ small red onions thinly sliced
1 avocados diced
¼ cups chopped cilantro
1 tablespoons lime juice

Cilantro-Yogurt Sauce

½ cups plain coconut yogurt
2 tablespoons chopped cilantro
1 tablespoons lime juice
1 cloves garlic crushed
¼ teaspoons sea salt
