This herbed quinoa salad is packed with fresh parsley and cilantro, crisp vegetables, and a bright lime dressing. Instead of using fresh herbs simply as a garnish, this recipe uses them generously, making them a substantial part of the salad and adding an array of protective phytonutrients, including the carotenoid lutein and the flavonoid apigenin, in every serving. Enjoy it on its own for a light vegan meal, or add sliced grilled or seared chicken breast for additional protein. For easy lunches throughout the week, divide the salad among individual glass containers and add sliced chicken if desired. If dairy works for your diet, crumbled feta cheese is also an excellent addition.
